Our approach to the perfect Croque

Classic croque monsieur recipe


For the bechamel
  • 1/2 cup of unsalted butter
  • 1/2 cup of all purpose flour
  • 2 cups of whole  milk
  • 2 cups of whole  milk
  • Pinch of kosher salt
  • Pinch of fresh grounded black pepper
  • 1/2 teaspoon of nutmeg
For the sandwich
  • 6 thick slices of white sandwich bread
  • 5 oz of good quality smoked ( for better flavor ) ham
  • 7 oz of grated  gruyere cheese

Instructions for the bechamel

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk it with the flour
  3. Stirring for about 2 good minutes (until you have a little paste called roux.)
  4. Then gradually add the milk (Stir it again until the all texture is smooth)
  5. Cook until the sauce is thickened.
  6. Season with salt , black pepper and nutmeg.
  7. Turn off the heat, and set aside

Instructions for the sandwich

  1. Preheat the oven at 375 F (Use a silpat or parchment paper in your baking tray)
  2. Spread each slice of bread with the Bechamel (make sure that you have some sauce all the way to the edges)
  3. Put 4 slices of smoked ham on only 3 pieces of bread.
  4. Top all your 6 breads with your grated gruyere everywhere.
  5. Now straight in the oven with bechamel side up
  6. Bake at 375 F for about 7 to 8 minutes. Then 1 minute on broil , until the cheese on top is lightly golden brown.
  7. Make 3 sandwiches by placing the slices without ham on top of the other ones.
